- Valencian paella. Original recipe from the Valencian Community: rice is the main ingredient, followed by chicken, rabbit and vegetables.We also offer the option of seafood. This recipe is more laborious, it needs a previous fish and vegetable broth. For its preparation, a sofrito called “salmorreta” is prepared.For vegetarians and vegans we will cook a vegetable paella. Made with seasonal vegetables from Valencian orchards. It has no meat or fish and does not need fumet. 100 % vegan.In My First Paella you will learn how to cook authentic Valencian paella.A team of native cooks and assistants will teach you how to cook it in the most fun and entertaining way. We will try to teach you all the secrets of paella.We will meet at the door of the parish of San Valero. We will go together to the Ruzafa market and buy the fresh products needed to cook a good paella. While we buy, we will tell you about the origin of paella, the customs and culture of the Valencians.Afterwards, we will walk 8 minutes to the kitchen, where the chef will be waiting for us with delicious freshly cooked tapas, which we will accompany with sangria, beer, water… Then, our chef will guide you step by step. You are the protagonist. Once finished, we will sit down to taste it. We will accompany the paella with a Valencian tomato salad, local wines, seasonal fruit, typical Valencian sponge cake, sweet wine and coffee.
