Welcome to Kaikaya, Japanese-Brazilian Nikkei fusion cuisine.
In 1908 the Kasato Maru, docked in the port of Santos where the first Japanese arrived in Brazil as labor for the coffee plantations, according to a treaty signed between the two nations.
Japanese food was far from Brazilian food, in terms of products and processing, but the expatriates had no choice but to rely on local food for their sustenance.
